Our shoulder of lamb cuts are so underrated, yet they're such a lean and flavoursome cut of lamb that is perfect for various dishes - whether it's a special occasion of hearty week night meal. Locally sourced from grass-fed free range farms that maintain the highest in animal welfare standards.
We suggest approximately 35oz/1kg serves 2-3 people. The minimum weight for this cut is 35oz/1kg and the maximum is approximately 70oz/2kg which would serve 4-6 people.
Cook for 40 minutes per 500g, plus 40 minutes at 170 C. Due to the longer cooking time of slow roast shoulder, it’s a good idea to cover it with foil to help retain moisture. Take the foil off for the last 30 minutes of the cooking time to let the skin crisp up.
