One of our most flavoursome (and under-rated) cuts of lamb. The breast is typically a fattier cut, but benefits from long slow-cooking in which the fat can melt away to be discarded. This results in beautiful rich-tasting tender meat with a crispy outer skin. A real treat as a week night meal for the family.
We recommend approximately 8oz/250g per person.
Breast is fairly fatty but very flavoursome and works best when cooked slowly so that much of the fat can melt off and be discarded from the roasting tin. Cooked this way you are left with meltingly tender meat and a really crispy skin which has lots of flavour. We recommend 25/30 minutes per 450 grams.
